Kids' Favourite Chocolate Chip Muffins Recipe!

Makes 36 muffins - great for family celebrations or children's parties and sleepovers!

This recipe is so popular. Pumpkin puree makes deliciously moist muffins, perfect for a quick treat.  It got the thumbs up from my in-laws and children.  Once you start eating them, it is hard to stop!

I used 400g of home-made pumpkin puree, but a tin of pumpkin puree works just as well.

Ingredients
1 can 400g or pumpkin puree (or 400g home cooked puree)
1.5 cups all-purpose (or plain) flour
1.5 cups whole-wheat flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon or pumpkins pie spice
1/2 tsp salt
4 large eggs, beaten
2 cups granulated sugar
1 cup vegetable oil
2 cups chocolate chips

  • Preheat oven to 350F, Gas Mark 4 or 180C and put 36 muffin cases in a muffin tray.
  • Sieve the following ingredients into a medium bowl: all-purpose and whole-wheat flours, baking soda, baking powder, salt and spice.
  • Combine eggs and sugar in a large bowl.  Add pumpkin and oil and mix well.
  • Add the dry ingredients to the wet mix and stir until just combined.
  • Stir in chocolate chips and spoon into the muffin cases.
  • Bake in the oven for 20-25 minutes.
