Gorgeous Courgette Soup!

Try my Mother-in-Law's gorgeous courgette soup! It is a favourite in our family and great for using up courgettes of any size... especially if you have a glut and home-made bread.


Ingredients
1 medium or large onion chopped
1 tbsp sunflower oil
2 large courgettes or 3 medium/small
2tsp dill
2 vegetable stock cubes
1pt water

Method
  • Heat the oil in a large pan and add the chopped onion.  
  • Cook for 5-10 minutes, until the onion is soft.
  • Add chopped courgettes and dill  and continue cooking.
  • Make the stock and add to the pan: 2 stock cubes dissolved in 1 pint boiling water.
  • Season with salt and pepper to taste.
  • Cook on a gentle heat for 25 minutes and set aside to cool.
  • When cool, blitz in a blender.
  •  Pop it back into the pan, reheat and serve.
Add a swirl of cream or creme-fraiche and enjoy!

Soup with a crusty roll is perfect for a quick lunch.  I buy soup freezer bags from Lakeland and Wilkinson's and use these to freeze quantities of soup. I take the soup straight from freezer to microwave, heat it up and it is ready in minutes...
